Shape into ball, oil and let rise in a bowl, covered in warm place for an hour. Punch down, cut into three pieces and let rise again for 1 hour. Cover with damp cloth and place in refrigerator until ready to use. Take out and let rest for 5 min. before rolling dough out. "As they say, you can't take the dough with you"
